- 5 tablespoons unsalted butter, room temperature
- 1 cup granulated sugar (divided)
- 1 teaspoon vanilla extract
- 1 egg
- ½ cup 1% low-fat milk
- 1 cup flour
- 1 ¼ teaspoons baking powder
- 1/8 teaspoon salt
- ¼ teaspoon ground cinnamon
- 4 cups (1-inch-thick) sliced rhubarb (about 1 pound)
- 1 teaspoon powdered sugar (optional)

,%20so%20I%20made%20it%20last%20week.%20%20It%20was%20so%20good,%20I%20had%20to%20make%20it%20again%20this%20week%20for%20potluck.%3C/p%3E%3Cp%3ERhubarb%20Pudding%20Cake%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPlace%20butter%20in%20a%20large%20bowl%20and%20beat%20with%20a%20mixer%20at%20medium%20speed%20until%20smooth.%20Add%202/3%20cup%20granulated%20sugar;%20beat%20until%20well%20blended.%20%20Add%20vanilla%20and%20egg,%20beat%20well,%20then%20add%20milk.%3C/p%3E%3Cp%3ECombine%20flour,%20baking%20powder,%20cinnamon%20and%20salt.%20%20Beat%20into%20butter%20mixture%20until%20smooth.%3C/p%3E%3Cp%3ECombine%20rhubarb%20and%20remaining%201/3%20cup%20granulated%20sugar%20in%20an%208-inch%20square%20baking%20dish%20coated%20with%20cooking%20spray.%20Spoon%20batter%20over%20rhubarb%20mixture.%3C/p%3E%3Cp%3EBake%20in%20preheated%20350%C2%B0%20oven%2045%20minutes%20or%20until%20a%20wooden%20pick%20inserted%20into%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20and%20sprinkle%20with%20powdered%20sugar.%20Serve%20with%20a%20dollop%20of%20whipped%20cream%20if%20desired.%3C/p%3E%3Cp%3EThe%20notes%20on%20the%20recipe%20said:%3C/p%3E%3Cp%3EIf%20fresh%20rhubarb%20isn't%20available,%20make%20it%20with%20frozen%20rhubarb,%20thawed%20and%20well%20drained.%20The%20cake%20is%20good%20either%20way,%20although%20it's%20moister%20and%20more%20pudding-like%20with%20fresh.%3C/p%3E%3Cp%3EI%20made%20it%20with%20fresh%20rhubarb%20last%20time%20and%20with%20frozen%20this%20time,%20though%20I%20didn't%20completely%20thaw%20or%20drain%20the%20frozen%20rhubarb%20-%20so%20I%20guess%20we'll%20see.%20%20I'm%20not%20sure%20it%20was%20'pudding-like'%20at%20all,%20even%20with%20fresh%20rhubarb.%20%20It%20was%20a%20very%20moist%20cake%20with%20a%20wonderful%20flavor!%20%20I%20had%20it%20with%20whipped%20cream%20the%20first%20time,%20as%20you%20can%20see%20from%20the%20picture,%20but%20I%20didn't%20bother%20with%20the%20whipped%20cream%20after%20that.%20%20The%20cake%20is%20just%20perfect%20on%20its%20own.%3C/p%3E%3Cp%3EThe%20original%20recipe%20called%20for%20mixing%202/3%20cup%20sugar%20with%20the%20rhubarb,%20but%20I%20cut%20that%20in%20half%20because%20I%20believe%20you%20should%20be%20able%20to%20taste%20the%20tartness%20of%20the%20rhubarb.%20I%20love%20the%20burst%20of%20tart%20flavor%20from%20the%20rhubarb%20balanced%20against%20the%20sweetness%20of%20the%20cake.%20I%20hate%20that%20most%20recipes%20want%20to%20hide%20that%20tartness%20with%20so%20much%20sugar!%20%20If%20you're%20looking%20for%20sweet,%20then%20I%20think%20you%20should%20try%20something%20else,%20because%20rhubarb%20is%20tart,%20and%20that's%20what%20makes%20it%20special!%3C/p%3E%3Cp%3ERhubarb%20Pudding%20Cake%3C/p%3E%3Cp%3E2012-05-25T22:44:00-05:00%3C/p%3E%3Cp%3EAnna%20Hagen%3C/p%3E%3Cp%3Ecake%7Crhubarb%7Crhubarb%20dessert%7C%3C/p%3E){kind=link}
