  • Bouillon Cube - 1 (I used a no salt added-vegan bouillon)
  • Zucchini - 1 medium, chopped
  • Carrot - 1 small, finely chopped
  • Onion - 1 small, chopped
  • Spinach - 2~3 cups, chopped
  • Lettuce - 1~2 cups, chopped
  • Polenta - 2tbsp
  • Salt & Pepper - to taste
  • Cheese - to serve (optional)
  • Butter - to serve (optional)
