Ingredients
- 4 tablespoons unsalted butter, at room temperature
- ¾ cup granulated sugar
- 1 egg
- 2½ tablespoons unsweetened cocoa powder
- 3 tablespoons red food coloring
- ½ teaspoon vanilla extract
- ½ cup buttermilk
- 1 cup + 2 tablespoons all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1½ teaspoons distilled white vinegar
- For the Cream Cheese Frosting:
- 4 ounces butter, at room temperature
- 4 ounces cream cheese, at room temperature
- 2½ cups powdered sugar
- 1 tablespoon vanilla extract

%20anyway?%20After%20doing%20a%20little%20research,%20I%20found%20that%20while%20foods%20were%20rationed%20during%20war%20time,%20bakers%20used%20boiled%20beets%20to%20enhance%20the%20color%20of%20their%20cakes%20and%20to%20retain%20moisture.%20Red%20velvet%20cake%20was%20a%20signature%20dessert%20at%20the%20Waldorf-Astoria%20Hotel%20during%20the%201920s,%20and%20was%20also%20well-known%20in%20the%20restaurants%20and%20bakeries%20of%20the%20Eaton%E2%80%99s%20department%20store%20chain%20in%20Canada%20during%20the%201940s%20and%201950s.%20Many%20attribute%20the%20cake%E2%80%99s%20recent%20popularity%20to%20the%20film%20Steel%20Magnolias,%20in%20which%20the%20groom%E2%80%99s%20cake%20was%20a%20red%20velvet%20cake%20in%20the%20shape%20of%20an%20armadillo.%3C/p%3E%3Cp%3EAll%20red%20velvet%20cakes%20have%20specific%20ingredients%20in%20common:%20cocoa%20powder,%20white%20vinegar,%20buttermilk%20and%20baking%20soda;%20the%20reaction%20of%20the%20vinegar%20with%20the%20buttermilk%20helps%20to%20pull%20out%20the%20red%20color%20in%20the%20cocoa%20powder.%20I%20wasn%E2%80%99t%20always%20sold%20on%20red%20velvet,%20but%20I%20was%20eventually%20converted%E2%80%A6%3C/p%3E%3Cp%3ESo%20now,%20on%20to%20my%20history%20with%20red%20velvet.%20When%20I%20first%20tried%20a%20red%20velvet%20cupcake,%20to%20say%20that%20I%20was%20underwhelmed%20would%20be%20a%20gross%20understatement.%20After%20all%20of%20the%20buzz%20that%20red%20velvet%20had%20been%20receiving,%20I%20was%20expecting%20to%20be%20blown%20away.%20What%20I%20ate%20was%20pretty%20dry%20and%20tasteless%20(although%20the%20cream%20cheese%20frosting%20was%20good!).%20I%20wasn%E2%80%99t%20impressed%20(obviously)%20and%20it%20was%20about%20six%20months%20before%20I%20would%20try%20one%20again.%20While%20doing%20a%20little%20Georgetown%20cupcake%20tour%20while%20in%20DC%20for%20a%20weekend,%20I%20had%20a%20red%20velvet%20cupcake%20from%20Baked%20and%20Wired.%20It%20was%20seriously%20amazing.%20It%20changed%20my%20mind%20about%20red%20velvet%20%E2%80%93%20it%20was%20fluffy,%20moist,%20with%20a%20hint%20of%20chocolate,%20and%20was%20all%20kinds%20of%20delicious.%20I%20was%20an%20official%20convert.%3C/p%3E%3Cp%3EThe%20next%20step,%20of%20course,%20was%20to%20make%20a%20great%20one%20at%20home.%20I%20did%20some%20reading,%20I%20looked%20at%20a%20lot%20of%20recipes,%20and%20in%20the%20end%20I%20decided%20to%20try%20this%20one.%20And%20I%E2%80%99m%20so%20glad%20I%20did,%20because%20I%20don%E2%80%99t%20think%20a%20better%20one%20could%20exist.%3C/p%3E%3Cp%3EThey%20are%20everything%20I%20was%20hoping%20for%20%E2%80%93%20moist,%20fluffy,%20a%20tiny%20bit%20chocolatey,%20and%20a%20perfect%20vehicle%20for%20a%20heaping%20pile%20of%20cream%20cheese%20frosting!%3C/p%3E%3Cp%3ERed%20velvet%20cupcakes%20are%20amazing%20any%20time%20of%20year,%20but%20(obviously)%20especially%20around%20Valentine%E2%80%99s%20Day.%3C/p%3E%3Cp%3EDress%20them%20up%20with%20some%20pink%20and%20red%20sprinkles%20and%20share%20them%20with%20someone%20special!%3C/p%3E%3Cp%3EOne%20year%20ago:%20Ultimate%20Triple%20Chocolate%20Brownies%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Red%20Velvet%20Roll%20Cake%20with%20White%20Chocolate-Cream%20Cheese%20Filling%3C/p%3E%3Cp%3EFour%20years%20ago:%20How%20to%20Make%20Sushi%20at%20Home%3C/p%3E%3Cp%3EFive%20years%20ago:%20Red%20Velvet%20Whoopie%20Pies%3C/p%3E%3Cp%3ESix%20years%20ago:%20Icebox%20Cake%3C/p%3E%3Cp%3ERed%20Velvet%20Cupcakes%20with%20Cream%20Cheese%20Frosting%3C/p%3E%3Cp%3EYield:%2012%20cupcakes%3C/p%3E%3Cp%3EPrep%20Time:%2015%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2020%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%2035%20minutes%3C/p%3E%3Cp%3EThe%20BEST%20red%20velvet%20cupcakes%20-%20a%20gorgeous%20red%20color,%20moist%20and%20fluffy,%20and%20topped%20with%20luscious%20cream%20cheese%20frosting.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Cupcakes:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees%20F.%20Line%20a%20standard%20muffin/cupcake%20pan%20with%20liners.%3C/p%3E%3Cp%3E2.%20On%20medium-high%20speed,%20cream%20the%20butter%20and%20sugar%20until%20light%20and%20fluffy,%20about%203%20minutes.%20Turn%20the%20mixer%20to%20high%20and%20add%20the%20egg.%20Scrape%20down%20the%20bowl%20and%20beat%20until%20well%20incorporated.%3C/p%3E%3Cp%3E3.%20In%20a%20separate%20small%20bowl,%20mix%20together%20the%20cocoa%20powder,%20vanilla%20extract%20and%20red%20food%20coloring%20to%20make%20a%20thick%20paste.%20Add%20to%20the%20batter%20and%20mix%20on%20medium%20speed%20until%20completely%20combined.%20You%20may%20need%20to%20stop%20the%20mixer%20to%20scrape%20the%20bottom%20of%20the%20bowl,%20making%20sure%20that%20all%20the%20batter%20gets%20color.%3C/p%3E%3Cp%3E4.%20Reduce%20the%20mixer%20speed%20to%20low%20and%20slowly%20add%20half%20of%20the%20buttermilk.%20Add%20half%20of%20the%20flour%20and%20mix%20until%20combined.%20Scrape%20the%20bowl%20and%20repeat%20the%20process%20with%20the%20remaining%20milk%20and%20flour.%20Beat%20on%20high%20until%20smooth.%3C/p%3E%3Cp%3E5.%20Again,%20reduce%20the%20mixer%20speed%20to%20low%20and%20add%20the%20salt,%20baking%20soda%20and%20vinegar.%20Turn%20to%20high%20and%20beat%20for%20another%20couple%20of%20minutes%20until%20completely%20combined%20and%20smooth.%3C/p%3E%3Cp%3E6.%20Divide%20the%20batter%20evenly%20between%20the%20cupcake%20liners%20and%20bake%20for%20about%2020%20minutes,%20or%20until%20a%20thin%20knife%20or%20skewer%20inserted%20into%20the%20center%20of%20the%20largest%20cupcake%20comes%20out%20clean.%3C/p%3E%3Cp%3E7.%20Cool%20for%2010%20minutes%20and%20then%20remove%20cupcakes%20from%20the%20pan%20and%20place%20them%20on%20a%20cooling%20rack%20to%20cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3E8.%20To%20make%20the%20frosting:%20Using%20the%20whisk%20attachment,%20whip%20the%20butter%20and%20cream%20cheese%20on%20high%20speed%20for%20about%205%20minutes,%20scraping%20the%20bowl%20down%20as%20necessary.%20Reduce%20the%20speed%20to%20low%20and%20slowly%20add%20the%20powdered%20sugar%20until%20all%20is%20incorporated.%20Add%20the%20vanilla%20and%20mix%20to%20combine.%20Increase%20the%20speed%20to%20medium%20high%20and%20whip%20for%20a%20few%20minutes%20until%20the%20frosting%20is%20light%20and%20fluffy,%20scraping%20the%20bowl%20as%20necessary.%3C/p%3E%3Cp%3E*Note:%20This%20recipe%20can%20be%20doubled%20to%20make%20an%208%20or%209-inch%20layer%20cake.%3C/p%3E%3Cp%3EThis%20recipe%20was%20originally%20published%20on%20November%208,%202010.%3C/p%3E){kind=link}
