.%20I%20really%20consider%20myself%20to%20be%20full%20of%20empathy,%20trying%20to%20understand%20where%20people%20are%20coming%20from,%20based%20on%20their%20life%20experiences.%20But,%20I%20know%20that%20some%20things%20you%20cannot%20relate%20to,%20until%20you%20experience%20them%20first%20hand%20for%20yourself.%20My%20father%20has%20suffered%20from%20sinus%20problems%20for%20as%20long%20as%20I%20can%20remember,%20ensuring%20that%20one%20drug%20company%20has%20been%20kept%20in%20business%20from%20the%20medication%20he%20has%20to%20take.%20Last%20week%20I%20developed%20a%20low%20grade%20headache.%20This%20is%20not%20usual%20for%20me,%20but%20I%20am%20always%20loathe%20to%20take%20anything%20without%20trying%20to%20resolve%20the%20problem%20naturally.%20Usually%20a%20headache%20is%20a%20sign%20of%20dehydration.%20And%20even%20though%20I%20drink%20a%20lot%20of%20water,%20I%20thought%20that%20a%20lack%20of%20water%20could%20be%20the%20cause.%20And%20so%20I%20had%20another%20glass%20of%20water.%20The%20headache%20did%20not%20go%20away,%20and%20only%20when%20I%20was%20washing%20my%20face%20that%20night%20did%20I%20realise%20that%20the%20pain%20was%20coming%20from%20my%20sinuses.%20I%20have%20medication%20for%20this%20and%20took%20two%20tablets%20that%20night,%20and%20the%20headache%20went%20away%20for%20a%20bit.%20But%20it%20came%20back%20and%20made%20me%20feel%20so%20uncomfortable.%20I%20have%20now%20gone%20and%20bought%20some%20no%20dose%20tablets%20that%20contain%20pseudoephedrine,%20a%20banned%20substance%20on%20the%20WADA%20list.%20Thankfully%20I%20no%20longer%20compete%20in%20anything%20where%20drug%20tests%20are%20used%20as%20I%20can%20see%20myself%20needing%20these%20tablets%20for%20a%20while%20as%20the%20sinus%20congestion%20is%20a%20result%20of%20the%20environmental%20conditions%20we%20live%20in.%20While%20suffering%20from%20this%20headache%20on%20Saturday,%20I%20made%20the%20pastry%20for%20my%20rhubarb%20crumble%20cheesecake.%20I%20did%20not%20press%20it%20thin%20enough%20as%20you%20can%20see%20from%20the%20photographs.%20I%20think%20if%20I%20were%20to%20make%20this%20again,%20I%20would%20also%20bake%20the%20crumble%20for%205%20minutes%20less%20as%20the%20crumble%20got%20a%20bit%20too%20dark%20on%20top,%20making%20it%20very%20hard.%3C/p%3E%3Cp%3EAdapted%20from%20Paul%20Hollywood's%20100%20Great%20Breads%20page%20140%20375g%20bread%20flour,%20plus%20extra%20for%20dusting%20250g%20caster%20sugar%20-%20I%20used%20fructose%20100g%20ground%20almonds%20125g%20butter%201%20egg%2030mls%20water%20adapted%20from%20bbc.co.uk%20560g%20rhubarb,%20thickly%20sliced%2015mls%20lemon%20juice%2030mls%20sugar%20-%20I%20used%20fructose%20500g%20Mascarpone%20cheese%20400g%20cream%20cheese%20125g%20caster%20sugar%20-%20I%20used%20fructose%20Seeds%20from%201%20vanilla%20bean%20150mls%20sour%20cream%204%20eggs%2010mls%20ground%20ginger%3C/p%3E%3Cp%3E100g%20flour%20100g%20sugar%20-%20I%20used%20fructose%202.5mls%20ground%20ginger%2050g%20butter%205mls%20liquid%20from%20cooking%20the%20rhubarb%3C/p%3E%3Cp%3EPlace%20all%20of%20the%20ingredients%20into%20a%20stand%20mixing%20bowl%20Using%20your%20whisk%20attachment,%20beat%20until%20smooth%20Turn%20out%20onto%20a%20lightly%20dusted%20surface%20and%20shape%20into%20a%20disc%20Cover%20with%20cling%20film%20and%20place%20in%20the%20fridge%20for%2030%20minutes%20Roll%20the%20disc%20out%20into%20a%20large%20circle,%20getting%20the%20pastry%20as%20thin%20as%20possible%20Line%20a%20spring%20form%20baking%20tin%20Place%20the%20pastry%20into%20the%20baking%20tin,%20pressing%20it%20firmly%20on%20the%20bottom%20and%20sides%20Place%20the%20tin%20into%20the%20fridge%20for%2030%20minutes%20to%20rest%20Preheat%20the%20oven%20to%20180%C2%B0%20Celsius%20Place%20the%20rhubarb%20into%20an%20oven%20proof%20dish%20Place%20the%20lemon%20juice%20into%20a%20jug%20and%20mix%20in%20the%20sugar%20Pour%20over%20the%20rhubarb%20Cover%20the%20rhubarb%20with%20tin%20foil%20Bake%20for%2050%20minutes%20Remove%20from%20the%20oven%20and%20strain%20off%20the%20liquid,%20reserving%20for%20the%20crumble%20Set%20aside%20to%20cool%20completely%20Place%20the%20Mascarpone%20and%20cream%20cheese%20into%20a%20stand%20mixer%20bowl%20Using%20a%20paddle%20beater%20on%20a%20low%20speed,%20mix%20until%20smooth%20Add%20the%20sugar,%20vanilla%20and%20sour%20cream%20Mix%20until%20smooth%20Add%20the%20eggs,%20one%20at%20a%20time,%20mixing%20until%20completely%20combined%20Add%20the%20rhubarb%20and%20ginger%20and%20mix%20in%20using%20a%20spatula%20Pour%20the%20mixture%20into%20the%20pastry%20shell%20Bake%20for%2040%20minutes%20Place%20the%20flour,%20sugar%20and%20ginger%20into%20a%20mixing%20bowl%20Mix%20and%20then%20add%20the%20butter%20Rub%20the%20butter%20in,%20until%20the%20mixture%20resembles%20bread%20crumbs%20Stir%20in%20the%20reserved%20rhubarb%20cooking%20liquid%20Carefully%20remove%20from%20the%20oven%20and%20sprinkle%20over%20the%20crumble%20topping%20Bake%20for%20an%20additional%2030%20minutes%20Turn%20the%20oven%20off%
