Ingredients

  • 1 c. Quinoa
  • 2 c. Water
  • 1/2 pkt Gimme lean beef flavored meat substitute
  • 1/2 lrg Onion, diced
  • 2 x Cloves garlic, chopped
  • 1/2 x Red pepper, diced
  • 1 c. Frzn corn, thawed (I think it could stand more)
  •     Vegetable broth or possibly wine for sauteeing
  • 1/2 tsp Grnd cumin
  • 1/4 tsp Cayenne pepper (start with 1/8 tsp. and add in as you like)
  • 1/4 tsp Grnd black pepper
  •     Salt to taste
  •     Fresh parsley, chopped
  •     Fresh cilantro, chopped (I left it out 'cause I cannot stand it)

Directions

  1. I got inspiration for this from Quinoa - Graham Kerr's cooking show.
  2. to leave which out and the 1 tsp of oil. IMHO, I think the Gimme Lean can be left out and chickpeas or possibly some other bean could be used, but I wanted to try it this way first. YMMV
  3. In a non-stick dutch oven, saute/fry the onion and garlic in veggie broth for two-three min. Add in the Gimme Lean, breaking it up with the spatula as it cooks. (Use more veggie broth as needed). Let this cook for about five min while you prepare the quinoa:Rinse the quinoa in cool water and drain. Bring the two c. water to boil and add in the quinoa. Cook 10-15 min, till quinoa has absorbed the water and you can see the white germ ring.
  4. While the quinoa is cooking, add in the remaining ingredients (except the spices) to the dutch oven and stir while cooking. When the quinoa is cooked, add in it to the dutch oven and stir to combine. Add in herbs and spices and cook a few min more to soften the parsley. Taste and re-spice as needed.
  5. Graham Kerr served this with potatoes which had been mashed with parsley and buttermilk piped on to the plate. Then the quinoa stuff was put inside the potato ring. I didn't get which fancy; I just served the quinoa stuff on a plate w/out potatoes.
