Prosciutto Wrapped Figs With Blue Cheese Cream Recipe

Ingredients

  • 6 x ripe figs
  •     (preferably Black Mission)
  • 6 piece prosciutto thinly sliced
  • 1 c. heavy cream
  • 1/2 c. crumbled blue cheese more for garnish
  •     (such as gorgonzola)
  • 1 Tbsp. extra virgin olive oil
  •     Chervil sprigs for optional garnish

Directions

  1. Wrap prosciutto around figs. Bring cream to a simmer. Slowly whisk in cheese till it is dissolved, about 1 minute. Remove from heat and set aside.
  2. Place wrapped figs in a heated saute/fry pan with extra virgin olive oil and pan fry till lightly crisp and soft to the touch, about 2 min on each side. (Note: If fig is still hard, it wasn't ripe sufficient. Place in a 350 degree oven for an additional five min.) Remove figs from pan. Cover the bottom of a bowl or possibly rimmed plate with sauce. Place figs in bowl or possibly on plate and crumble additional blue cheese over them. Garnish with chervil sprigs. Serve warm.
  3. This recipe yields 4 to 6 servings.
