Ingredients
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 1/3 cup white corn syrup
- 1 tablespoon butter or margarine
- 1/2 cup evaporated milk
- 1/8 teaspoon salt
- 1 1/2 cup pecans
- 1 teaspoon vanilla
Directions
- Toast pecans in 300 degree oven for 5 miutes
- Mix first 6 ingredients together and cook over medium heat to soft ball stage, stirring frequently
- Remove from heat and add vanilla and roasted pecans
- Stir with a wooden spoon for 3 to 6 minutes until mixture starts to thicken and color becomes creamy
- Quickly spoon candy onto waxed paper
- If the mixture becomes too stiff, return to heat (add 1 - 2 teaspoons of water if needed) and stir until it becomes soft an more fluid, then continue to spoon out
