  • 4 medium potatoes, par-baked*, peeled, and chopped into 1-inch cubes
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon pepper
  • 13 ounces smoked sausage (chicken or turkey smoked sausage work well, too), sliced into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch pieces
