  • 1 Tbsp. vegetable oil
  • 1 lb pork tenderloin cut 3/4" to 1" cubes
  • 1 med onion coarsely minced
  • 1 x celery rib sliced
  • 1/2 tsp dry basil leaves
  • 1/4 tsp dry rosemary leaves crushed
  • 1/4 tsp dry oregano leaves
  • 2 Tbsp. all-purpose flour
  • 1 c. chicken broth
  • 1/2 pkt frzn mixed vegetables - (16 ounce)
  •     (carrots, potatoes and peas)
  • 1 jar sliced mushrooms - (4 1/2 ounce) liquid removed well
  • 2 tsp lemon juice
  • 1/8 tsp grnd nutmeg
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Heat oil in large skittle over HIGH heat. Add in pork, onion, celery, basil, rosemary and oregano; cook till pork is browned.
  2. Place pork mix in crockpot. Whisk flour with chicken broth; pour into crockpot. Stir in frzn vegetables and mushrooms. Cover and cook on LOW 6 to 8 hrs.
  3. About 15 min before serving, stir in lemon juice, nutmeg, salt and pepper to taste. Serve over rice.
  4. This recipe yields 3 to 4 servings.
