Ingredients
- I highly recommend giving these sausage rolls a go if you are a meat lover. To make them, you will need (as modified by me):
- 2 tablespoons caraway seeds
- 1 tablespoon vegetable oil
- 3 brown onions, peeled and diced
- 4 cloves garlic, peeled and crushed
- 3 sprigs rosemary, finely chopped
- 1 teaspoon dried thyme
- 20g butter
- 2 Granny Smith apples, peeled, cored and diced
- 1 tablespoon white sugar
- 1 tablespoon red wine vinegar
- 1.2kg pork mince
- 65g fresh breadcrumbs
- 1 teaspoon salt
- 1 lightly beaten egg
- 5 sheets Pampas frozen puff pastry
- sesame seeds for sprinkling on top

,%20and%20on%20top%20of%20the%20sausage%20rolls,%20I%20used%20a%20mixture%20of%20sesame%20seeds%20and%20poppy%20seeds%20that%20I%20had%20from%20another%20project%20(again%20in%20substitution%20for%20fennel%20seeds).%3C/p%3E%3Cp%3EToast%20the%20caraway%20seeds%20in%20a%20small%20dry%20frypan%20until%20fragrant.%20%20Crush%20in%20a%20mortar%20and%20pestle,%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20frying%20pan,%20heat%20the%20vegetable%20oil.%20%20sweat%20off%20the%20garlic%20and%20onions%20until%20lightly%20caramelised.%20%20Add%20the%20caraway%20seeds,%20rosemary%20and%20thyme,%20cook%20for%20a%20minute,%20then%20set%20aside%20to%20cool.%3C/p%3E%3Cp%3EWipe%20out%20the%20large%20frypan%20and%20melt%20the%20butter%20in%20it.%20%20Cook%20the%20apples%20in%20the%20butter%20for%202%20minutes,%20then%20add%20the%20sugar%20to%20the%20pan.%20%20Cook%20until%20the%20sugar%20is%20caramelised,%20then%20deglaze%20the%20pan%20with%20the%20vinegar,%20and%20set%20the%20apples%20aside%20to%20cool.%3C/p%3E%3Cp%3ECombine%20the%20mince,%20apples,%20breadcrumbs%20and%20salt%20in%20a%20large%20mixing%20bowl.%20%20Using%20your%20hands,%20mix%20through%20the%20onion%20and%20garlic%20mixture%20until%20all%20ingredients%20are%20evenly%20distributed.%3C/p%3E%3Cp%3ECut%20each%20sheet%20of%20puff%20pastry%20in%20half.%20%20Divide%20the%20sausage%20mixture%20evenly%20between%20each%20half%20piece%20of%20pastry%20(10%20batches%20in%20all),%20and%20place%20the%20mince%20along%20a%20long%20edge%20of%20each%20piece%20of%20pastry,%20forming%20into%20a%20sausage%20shape%20with%20your%20hands%20which%20is%20the%20length%20of%20the%20pastry.%20%20Brush%20the%20other%20long%20edge%20of%20the%20pastry%20with%20the%20beaten%20egg,%20then%20roll%20the%20pastry%20from%20the%20meat%20side%20to%20the%20beaten%20egg%20side,%20with%20the%20sealed%20edge%20on%20the%20bottom.%20%20Place%20each%20roll%20on%20a%20baking%20tray,%20then%20brush%20the%20top%20of%20the%20sausage%20rolls%20with%20beaten%20egg,%20and%20sprinkle%20with%20sesame%20seeds.%20Lightly%20prick%20the%20top%20of%20each%20roll%20with%20a%20fork.%20%20Refrigerate%20the%20rolls%20for%20half%20an%20hour.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20180%20degrees%20Celsius.%20%20Bake%20the%20sausage%20rolls%20for%2040%20minutes%20or%20until%20golden%20on%20top%20and%20cooked%20through.%3C/p%3E%3Cp%3EServe%20warm%20with%20tomato%20sauce%20on%20the%20side.%3C/p%3E){kind=link}
