Polish Cucumber Salad Recipe

Ingredients

  •     Mizeria
  • 1 lrg cucumber
  • 1 tsp salt
  • 110 ml soured cream
  • 1 x juice of 1/2 lemon
  • 1/2 tsp caster sugar tsp. dry dillweed
  •     Fresly milled black pepper

Directions

  1. First peel the cucumber preferably with a potato peeler then thinly slice it and place in a cohnder sprinkling salt between the layers.
  2. Then stand the colander on a plate and leave it for about 1 hour to drain. Meanwhile mix the cream with the lemon juice caster sugar dillweed and a good seasoning of freshly milled black pepper.
  3. Now using your hands squeeze out a handful of cucumber slices at a time and transfer them to a serving dish.
  4. Then pour the cream mix over them and mix lightly to coat all the cucumber with the cream taste to check the seasoning.
  5. Cover the cucumber and refrigerateit lightly till ready to serve.
  6. This is very good served as a side salad with fish or possibly spicy Polish sausage.
  7. Serves 3
