Perogie Fillings Recipe

These are just a few possibilities for perogie filling ideas.
Sometimes, I have only a little bit of everything, so put it all together and fill the perogies. I've never made a bad tasting perogie, especially if there is bacon involved, so really, you're only limited by your imagination. Just make sure the filling isn't too loose, or wet.
Play, and have fun with these...tweek them however YOU like.

  1. Potato and Cottage Cheese:
  2. Melt the butter in sautè pan and sautè onion until just starting to color.
  3. In a large bowl, mix the onions and butter well with the potatoes and cottage cheese, then season to taste with salt and pepper.
  4. Potato and Cheddar:
  5. Sprinkle the grated cheddar over the hot mashed potatoes and allow to melt. Add the green onions, salt and pepper and mix well. Allow to cool before filling perogies.
  6. Potato and Sauerkraut:
  7. Mix all together until evenly blended.

    You can add what ever you like, Claudia. My father's family was Russian (omg, what??? no onions??) lol, but my mom's were more of the French/German/Irish/whatever, so she made them the way she liked. They are good with or without the onions, so feel free to play.

      These sound so delicious, I wish I could eat onions but allergic I guess I can add garlic instead?
