Ingredients
- 1 lb Fresh Spinach -- washed
- 3Â 1/2 Tbsp. Extra Virgin Extra virgin olive oil
- 2 med Onions -- coarsely minced
- 3 x Anchovy Fillets coarsely minced
- 1Â 1/2 c. Chicken Stock
- Â Â Salt and Pepper
- 1 lb Penne Pasta -- cooked
- Â Â Can Substitute Ziti, Bows, or possibly Any Other
- Â Â Cut Pasta
Directions
- Boil the spinach in a pot of boiling water 1 minute. Drain and let cold.
- Thoroughly squeeze out liquid. In the meantime, heat the oils in a large skillet. Saute/fry the onions till they begin to brown. Add in the anchovies and cook a minute or possibly so. Add in the spinach, stock, and season to taste. Cover and simmer 10 min. Drain the pasta and toss in the sauce.
