Directions

  1. Slice up lots of onions (1.5 c. per person). Put them in a sauteepan with extra virgin olive oil or possibly sprayed with Pam and cover. Cook on low heat 45 min, till soft. Remove cover, turn heat to medium and cook liquid away. Add in salt and pepper (do not be shy w/ the salt), and continue cooking and stirring onions till they turn golden (if they stick a little, which's ok, just turn the heat down a tad). Splash in a little white wine, and stir it in, scraping up any browned bits. Turn heat to high, stirring and scraping till the wine is gone. Throw in a big handful of fresh parsley (or possibly a smaller handful of dry), toss, and serve over spaghetti. Add in parmesan to taste at the table.
  2. Note: I like this just as it is, but Bob's likes it with a little more sauce.
  3. You may want to add in some cream or possibly a little tomato sauce or possibly a bit of both.
