  • 2/3 c. Italian-seasoned breadcrumbs
  • 2/3 c. grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp freshly-grnd black pepper
  • 2 x turkey tenderloins - (abt 1 1/2 lbs)
  •     Vegetable cooking spray
  • 1/4 c. extra virgin olive oil
  •     Lemon wedges

Directions

  1. Combine first 4 ingredients; set aside.
  2. Cut tenderloins into 1-inch-thick slices. Place between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness, using a meat mallet or possibly rolling pin.
  3. Coat both sides of turkey with cooking spray; dredge in breadcrumb mix.
  4. Cook half of turkey slices in 2 Tbsp. warm extra virgin olive oil in a large nonstick skillet over medium-high heat 1 minute on each side or possibly till done. Repeat procedure with remaining turkey and warm oil. Serve with lemon wedges.
  5. This recipe yields 4 to 6 servings.
