Directions

  1. Curry Pwdr: In a bowl combine all curry pwdr ingredients.
  2. Tomato Chutney: In a bowl combine all chutney ingredients.
  3. Curried Corn Sauce: Heat butter in a medium saucepan over medium heat. Add in onions and green apples and cook till soft. Add in garlic and cook for 1 minute. Add in curry pwdr and cook for 5 min. Add in stock, bring to a boil, reduce heat and simmer for 1 hour.
  4. Strain stock into a clean medium saucepan. Add in the corn to the stock and cook for 30 min, covered.
  5. Place the cream in a small saucepan and cook till reduced by half. Add in the reduced cream to the stock and simmer, covered for 10 min. Season with salt and pepper.
  6. Halibut: Heat a large saute/fry pan or possibly grill pan over high heat. Brush halibut with the oil and season with salt and pepper to taste. Cook the halibut for 3 min on each side. Serve with corn sauce and tomato chutney.
  7. This recipe yields 18 servings.
