  • 1 lb. fresh white mushrooms, finely diced
  • 1 small red onion, finely diced
  • 2 Jalapeño peppers, stemmed, seeded and finely diced
  • 1 handful, about 1/2 cup chopped fresh cilantro, chopped
  • 3/4 cup fresh lime juice
  • 1 Tbs olive oil
  • to taste kosher salt
