Ingredients
- 1 3/4 cup old fashioned oats
- 3/4 cup cocoa powder
- 1 1/2 tsp. baking powder

- 12-14 Stevia packets
- 3 egg whites
- 1 large banana, mashed
- 1 cup hot water
- 1/2 cup creamy peanut butter

%3C/p%3E%3Cp%3EWhen%20I%20found%20this%20recipe%20and%20saw%20how%20healthy%20these%20cute%20little%20muffins%20are%20I%20couldn't%20wait%20to%20make%20them.%20As%20you%20well%20know%20from%20the%20Reese's%20commercial,%20chocolate%20and%20peanut%20butter%20are%20one%20of%20the%20world's%20best%20combinations.%20It's%20not%20one%20I%20immediately%20go%20to%20when%20thinking%20of%20healthy%20muffins%20though%20which%20is%20just%20another%20reason%20why%20I%20couldn't%20wait%20to%20make%20them.%20Anytime%20you%20can%20use%20typically%20%22unhealthy%22%20ingredients%20to%20make%20a%20healthy%20recipe%20is%20a%20great%20day%20in%20my%20book!%3C/p%3E%3Cp%3EMini%20Chocolate%20Peanut%20Butter%20&%20Banana%20Muffins%3C/p%3E%3Cp%3ESource:%20Dashing%20Dish%3C/p%3E%3Cp%3EYield:%2036%20mini%20muffins%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350.%20Spray%20a%20mini%20muffin%20pan%20with%20non-stick%20cooking%20spray%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20Place%20peanut%20butter%20in%20a%20microwave-safe%20dish%20and%20microwave%20for%2030-45%20seconds,%20or%20until%20melted.%3C/p%3E%3Cp%3E3.%20In%20a%20small%20bowl,%20combine%20the%20old%20fashioned%20oats,%20cocoa%20powder,%20baking%20powder,%20baking%20soda,%20salt%20and%20Stevia%20packets.%3C/p%3E%3Cp%3E4.%20In%20the%20bowl%20of%20your%20stand%20mixer,%20combine%20the%20egg%20whites,%20banana,%20hot%20water%20and%20Greek%20yogurt.%20Add%20the%20melted%20peanut%20butter%20in%20the%20stand%20mixer%20and%20mix%20on%20low%20speed%20until%20combined.%20Slowly%20add%20in%20the%20dry%20ingredients%20and%20mix%20until%20well%20incorporated.%3C/p%3E%3Cp%3E5.%20Fill%20each%20mini%20muffin%20crevice%20to%20the%20top%20with%20the%20muffin%20mixture.%20Bake%20for%2013-15%20minutes%20or%20until%20the%20muffins%20are%20cooked%20through%20and%20a%20toothpick%20inserted%20into%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3E6.%20Let%20cool%20for%201-2%20minutes%20before%20removing%20from%20the%20muffin%20pan%20and%20transferring%20to%20a%20wire%20rack%20to%20continue%20cooling.%3C/p%3E%3Cp%3EI%20don't%20have%20very%20much%20experience%20baking%20with%20sugar%20substitutes%20which%20is%20why%20I%20think%20these%20muffins%20came%20out%20slightly%20bitter.%20They%20weren't%20bad%20by%20any%20means,%20but%20if%20you're%20looking%20for%20a%20sweet%20muffin,%20I'd%20recommend%20increasing%20the%20amount%20of%20Stevia%20used%20(maybe%2016-18%20packets)%20or%20decreasing%20the%20amount%20of%20cocoa%20powder%20to%201/2%20cup%20since%203/4%20cup%20makes%20for%20some%20really%20dark%20muffins.%3C/p%3E%3Cp%3EI%20was%20surprised%20on%20how%20strongly%20the%20banana%20flavor%20comes%20through%20on%20these.%20I%20thought%20they%20would%20be%20mainly%20chocolate%20and%20peanut%20butter.%20The%20best%20thing%20about%20them....they're%20only%2058%20calories%20each!%3C/p%3E%3Cp%3ENote:%20these%20muffins%20only%20last%20a%20few%20days.%20I%20was%20expecting%20to%20eat%20them%20for%20breakfast%20through%20Friday%20(being%20made%20on%20a%20Sunday),%20but%20by%20Thursday%20they%20had%20grown%20mold.%20I%20honestly%20have%20no%20idea%20why.%3C/p%3E){kind=link}
