Ingredients
- 3/4 c. sugar
- 2 x egg whites
- 2 c. frzn Raspberries
- 1 tsp vanilla
- 1 Tbsp. lemon juice healthy pinch salt
- 1 c. whipping cream, whipped
- 1 x (9") baked pastry shell or possibly crumb shell
Directions
- Combine sugar, egg whites, raspberries (partially thawed), vanilla, lemon juice and salt in large mixer bowl. Beat at high speed 15 min till thick and voluminous. Mix in whipped cream and pile mix in baked pie shell.
- Freeze several hrs. After pie is frzn, wrap in foil. To serve, remove from freezer, slice and serve immediately. Will keep a few days in freezer.
