Ingredients
- 8 strips bacon
- 1 large onion, finely chopped
- 1 medium clove garlic, minced
- 1/2 cup chicken stock
- 1/4 cup plus 2 tablespoons balsamic vinegar
- 1/2 teaspoon gground giner
- fresh black pepper (approximately 1/2 teaspoon)
- 1 1/2 teaspoons dry mustard
- 1/4 cup honey
- 2 tablespoons brown sugar
- 1/8 teaspoon allspice
- 1/4 teaspoon ground cinnamon
- 4 15-ounce cans black beans total - Use 3 cans black beans drained and rinsed plus 1 can black beans not rinsed or drained
- 1/3 cup dark rum

.%20The%20class%20was%20called%20%22Mexican%20Spring%20Dinner%22%20and%20it%20was%20such%20a%20fun%20time!%20A%20chef,%20an%20assistant%20chef%20and%20five%20students%20(including%20us)%20all%20spent%20a%20warm%20spring%20evening%20cooking,%20sharing%20tips%20and%20stories,%20and%20of%20course,%20breaking%20bread%20(well,%20nachos)%20together%20-%20what's%20not%20to%20love?%3C/p%3E%3Cp%3EWe%20paired%20off%20and%20split%20up%20the%20recipes%20so%20that%20our%20many%20hands%20could%20make%20lighter%20work.%20Chris%20and%20I%20started%20the%20Rum%20Baked%20Black%20Beans%20-%20aromatics,%20mustard,%20spices%20and%20rum%20mixed%20in%20with%20black%20beans,%20topped%20with%20crumbled%20bacon%20and%20baked%20for%20an%20hour%20-%20these%20were%20delicious,%20and%20the%20recipe%20is%20below.%20Our%20second%20task%20was%20to%20make%20the%20Lime%20Tortilla%20Soup,%20a%20fresh%20and%20healthy%20medley%20of%20vegetables%20and%20chicken%20with%20a%20tangy%20hint%20of%20lime%20and%20crunchy%20tortilla%20chips.%20A%20great%20tip%20from%20the%20chef%20-%20place%20fresh%20corn%20on%20the%20cob%20(still%20in%20its%20husk)%20in%20the%20microwave%20for%20four%20minutes%20and%20the%20corn%20steams%20itself,%20then%20you%20can%20eat%20it%20or%20remove%20it%20from%20the%20cob,%20depending%20on%20your%20needs!%3C/p%3E%3Cp%3EMeanwhile,%20another%20pair%20of%20students%20worked%20on%20the%20Grilled%20Shrimp%20Nachos%20with%20Orange%20Salsa%20Fresca%20and%20Guacamole.%20The%20shrimp%20were%20marinated%20in%20a%20garlic/lime%20juice%20mixture%20then%20grilled%20and%20placed%20on%20a%20nacho%20with%20a%20cool,%20citrusy,%20tangy%20salsa%20made%20from%20herbs,%20honey,%20oranges%20and%20jicama;%20these%20also%20received%20a%20small%20dollop%20of%20guacamole.%20I%20can't%20wait%20to%20try%20the%20salsa%20with%20other%20things!%3C/p%3E%3Cp%3EThe%20final%20student%20worked%20twice%20as%20hard%20as%20the%20rest%20of%20us%20on%20the%20Bread%20Pudding%20with%20Rum%20Sauce%20(Forgot%20to%20take%20a%20photo!%20Darn!),%20a%20sweet%20challah-bread%20concoction%20covered%20with%20a%20silky,%20boozy,%20caramel-colored%20topping%20that%20was%20a%20wonderful%20end%20to%20our%20convivial%20feast%20and%20learning%20experience.%3C/p%3E%3Cp%3EHere%20are%20some%20photos%20from%20the%20class,%20and%20a%20recipe%20for%20that%20tipsy%20take%20on%20baked%20beans%20(yum!).%20Special%20thanks%20to%20Lisa%20Montag%20Weikert%20for%20a%20great%20class%20and%20for%20permission%20to%20take%20photos%20and%20share%20her%20recipe%20for%20Rum%20Baked%20Black%20Beans.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325.%20In%20a%20large%20saucepan,%20cook%20bacon%20until%20crisp.%20Remove%20bacon%20and%20reserve%201%201/2%20tablespoons%20of%20the%20drippings.%20Place%20saucepan%20containing%20the%20reserved%20drippings%20over%20medium%20heat,%20and%20cook%20onions%20and%20garlic%20in%20it%20for%20about%20five%20minutes.%20Add%20chicken%20stock,%20vinegar,%20ginger,%20pepper,%20mustard,%20honey,%20brown%20sugar,%20allspice%20and%20cinnamon.%20Heat%20to%20boiling%20while%20stirring.%20Add%20the%20beans%20and%20mix%20well.%20Remove%20from%20heat%20and%20add%20the%20rum.%20Transfer%20to%20a%20baking%20dish%20and%20crumble%20bacon%20over%20the%20top.%20Cover%20and%20bake%20for%2045%20minutes%20to%201%20hour;%20remove%20cover%20and%20continue%20baking%20for%2020%20to%2030%20minutes.%20Enjoy!%3C/p%3E){kind=link}
