Ingredients
- 1/2 package penne pasta
- 1 english cucumber, de seeded and chopped
- 1 pkg cherry tomatoes, halved
- 1 can chickpeas, drained
- About 4 lightly packed cups of spring greens (This is about one cup per person but eyeball it... when you're done tossing, you may want more)
- 1 pkg kalamata olives, halved
- Feta cheese (optional)
- For the dressing:
- 3 Tablespoons apple cider vinegar
- 4 Tablespoons extra virgin olive oil
- 1 teaspoon fresh thyme, diced fine (make it fresh please!!)
- 2 Tablespoon fresh basil, julilenned and diced fine (make it fresh please!! Big difference. Big.)

%20I%20usually%20get%20the%20same%20thing%20but%20I%20decided%20to%20branch%20out%20and%20get%20the%20mediterranean%20salad.%20I%20am%20so%20glad%20I%20did%20because%20it's%20my%20new%20favorite%20thing%20on%20their%20menu.%3C/p%3E%3Cp%3ESo%20that%20brings%20me%20to%20my%20mediterranean%20salad...%20I%20was%20craving%20'the'%20salad%20but%20decided,%20as%20a%20creative%20home%20chef,%20I%20could%20totally%20do%20something%20of%20the%20like%20and%20rock%20it!%20I%20did%20a%20darn%20good%20job%20too...%20the%20chewiness%20of%20the%20pasta%20adds%20a%20great%20texture%20difference%20to%20the%20greens;%20the%20crunch%20of%20the%20veg%20is%20bright%20and%20refreshing;%20the%20bite%20of%20the%20kalamata%20olives...%20mmmm.%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EBoil%20pasta%20according%20to%20package%20directions.%20When%20done,%20strain%20and%20shock%20with%20cold%20water.%20The%20shocking%20may%20be%20controversial...%20some%20people%20don't%20think%20you%20should%20rinse%20pasta%20but%20I%20personally%20like%20to%20do%20so;%20and%20there%20you%20have%20it.%20:)%3C/p%3E%3Cp%3EIn%20a%20'shakeable'%20jar%20or%20container%20(my%20fave%20is%20a%20kerr%20jar%20that%20housed%20my%20sister%20in%20law's%20jam%20until%20Noodle%20Nose%20devoured%20it%20in%20a%20period%20of%20two%20days'%20worth%20of%20almond%20butter%20and%20jam%20sandwiches)%20combine%20vinegar,%20oil,%20herbs%20and%20salt.%20Seal%20that%20puppy%20up%20and%20shake%20the%20heck%20out%20of%20it.%20Note:%20I%20like%20to%20make%20my%20dressing%20early%20so%20the%20ingredients%20have%20time%20to%20'get%20to%20know'%20each%20other.%20You%20will%20want%20to%20do%20this%20so%20the%20flavors%20marry%20and%20make%20happy%20flavor%20babies...%3C/p%3E%3Cp%3EDe%20seed%20your%20cucumber%20and%20chop%20it%20up.%20You%20should%20also%20wash%20and%20halve%20your%20tomatoes,%20drain%20your%20chickpeas%20and%20halve%20your%20kalamata%20olives.%20You%20can%20do%20all%20this%20while%20your%20pasta%20is%20cooking!%3C/p%3E%3Cp%3EWhen%20everything%20is%20prepped%20and%20ready,%20get%20out%20a%20large%20bowl.%20In%20it,%20put%20some%20of%20your%20cooked%20pasta,%20cucumber,%20tomato%20and%20chickpeas%20(I%20mix%20each%20salad%20individually%20so%20everyone%20has%20the%20same%20amount%20of%20goodies%20and%20dressing.%20This%20makes%20for%20less%20fighting%20at%20the%20dinner%20table.%20Give%20your%20dressing%20jar%20another%20good%20shake,%20open%20and%20pour%20some%20of%20dressing.%20You're%20going%20to%20do%20more%20later%20so%20don't%20get%20too%20frisky.%20Toss%20those%20ingredients%20until%20completely%20covered.%3C/p%3E%3Cp%3ETo%20the%20mix%20you%20just%20tossed,%20add%20some%20(about%201%20packed%20cup)%20of%20your%20greens.%20This%20is%20why%20I%20don't%20have%20exact%20measurements%20for%20the%20greens...%20I%20like%20to%20'see'%20how%20much%20is%20needed%20as%20you%20toss%20each%20individual%20salad.%20Add%20a%20little%20more%20dressing,%20if%20desired%20and%20toss.%20I%20am%20not%20a%20huge%20dressing%20girl;%20I%20do%20not%20like%20my%20salads%20swimming%20in%20their%20dressing.%20I%20would%20rather%20toss%20lightly%20and%20offer%20my%20guests%20the%20option%20of%20more%20if%20they%20prefer%20to%20see%20their%20salad%20swim.%20In%20this%20case,%20you%20may%20want%20to%20make%20more%20dressing.%3C/p%3E%3Cp%3ENow,%20the%20kalamata%20olives...%20I%20didn't%20want%20them%20to%20sink%20to%20the%20bottom%20so%20I%20put%20in%20a%20very%20small%20handful%20and%20gave%20it%20a%20light%20toss.%20Then,%20for%20each%20individual%20salad,%20once%20they%20were%20plated,%20I%20put%20just%20a%20few%20more%20on%20top%20of%20each,%20for%20color%20and%20posterity...%20posterity?%20eh.%3C/p%3E%3Cp%3ENow,%20(again)%20the%20feta%20cheese.%20All%20the%20while%20I%20was%20making%20this%20salad%20I%20was%20saying%20to%20myself%20'don't%20forget%20the%20feta'.%20I%20actually%20can't%20even%20remember%20if%20the%20original%20salad%20had%20feta,%20but%20darn%20tootin',%20I%20did%20not%20want%20to%20forget%20the%20feta.%20So,%20what%20did%20I%20do?%20I%20forgot%20the%20feta.%20Actually%20the%20salad%20was%20really%20good%20without%20it.%20I%20didn't%20even%20notice%20it%20was%20missing%20until%20I%20was%20going%20back%20to%20my%20recipe%20note%20book%20to%20jot%20down%20some%20notes.%20It%20was%20then%20that%20the%20feta%20popped%20back%20in%20to%20my%20mind.%20That%20being%20said,%20if%20you%20want%20feta,%20sprinkle%20a%20little%20on%20top%20of%20each%20salad.%20If%20you%20don't%20want%20feta,%20it%20will%20look%20like%20the%20pictures%20you%20see%20here...%20either%20way%20it%20will%20be%20delicious!!%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EAs%20I%20said,%20to%20plate%20I%20toss%20in%20a%20large%20bowl%20as%20described%20above,%20then%20transfer%20to%20each%20plate,%20garnish%20with%20a%20few%20more%20olives%20and%20some%20feta,%20if%20you%20so%20choose.%20Offer%20dressing%20on%20the%20side,%20if%20you%20like%20to%20give%20your%20guests%20the%20option%20of%20'swimming'%20their%20salad
