Ingredients
- 4 c. Cool water
- 1/4 tsp Salt
- 1 c. Long-grain white rice
- 3 c. Lowfat milk
- 1/4 c. Raisins (optional)
- 1/2 c. Sugar
- 1/8 tsp Grnd cinnamon (optional)
- 1 1/2 tsp Pure vanilla extract Heavy cream, for serving (optional)
Directions
- 1. Bring the water to a boil in a heavy saucepan; add in the salt and stir in the rice with a fork. Cover and simmer over the lowest possible heat, stirring now and then, till the rice is very tender, about 35 min.
- 2. Add in the lowfat milk, optional raisins, sugar and optional cinnamon and simmer, uncovered, stirring frequently, till most of the lowfat milk is absorbed, usually about 20 min.
- 3. Remove from the heat, and stir in the vanilla. Serve with or possibly without cream poured over the top.
