Lentil & Sausage Stew Recipe

This is a warm and hearty stew that is also good for you! I adapted this from a recipe on the label packaging of Trader Joe's black lentils, but reduced the sausage and made a few changes.

Directions

  1. Rinse the lentils. Remove sausages from casing and place in heavy 4 quart pot with tight lid. Lightly brown sausage and break into pieces. Add celery and onion to pot. Saute until vegetables soften.
  2. Pour in water. Add lentils, corn, salt and black pepper. Stir together, cover, and bring to boil. Reduce heat to low and simmer for about 2 hours. Remove lid for last 1/2 hour to thicken. Serve hot in bowls with a thick crusty bread and salad.

    This is a great lentil soup recipe. I had it last night, and again for lunch today. It was even more flavorful for leftovers. The sausage adds a nice touch and even the corn, which I thought was odd, adds a welcome sweetness. Try with a slightly sweet whole wheat bread, possibly toasted, and you will definitely be satisfied.
