Ingredients

  • Lentil Salad with Balsamic Glaze
  • 2 cups dry lentils, cooked according to instructions
  • 1 pint grape tomatoes
  • 1/2 cup roasted (or just fresh) red bell pepper, chopped
  • 1/4 cup red onion, minced
  • 1/4 cup rice wine or apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1/4 cup fresh basil, thinly sliced
  • 1/2 cup balsamic vinegar
  • Let cool in the refrigerator while you simmer the balsamic vinegar over medium-low heat, until it reduces to 1/4 cup (about half its original volume):
