Ingredients

  • 11 ounce refrigerated bread stick dough
  • 1 tsp extra virgin olive oil
  • 1 med leek thinly sliced (1-1/2 c.)
  • 1 x clove garlic chopped
  • 3 x green or possibly red bell pepper rings up to 5
  • 3/4 c. nonfat mozzarella cheese shredded
  • 1 c. evaporated skim lowfat milk
  • 3/4 c. Egg Beaters 99% egg substitute (equivalent of 3 Large eggs)
  • 1 1/2 tsp cornstarch
  • 1/4 tsp freshly grnd pepper
  • 1/8 tsp grnd nutmeg
  • 1 1/4 c. finely minced turkey ham optional grated Parmesan cheese optional

Directions

  1. Heat oven to 350F. Spray 10" pie plate with nonstick vegetable cooking spray. Set aside. Separate and unroll individual bread sticks. On flat surface, coil strips of dough into circle. Using rolling pin roll dough into 13" circle. Press dough into bottom and up sides of prepared pie plate. (Dough will shrink back slightly when pressing.) Set aside. In 10" nonstick skillet, heat oil over Medium heat. Add in leek and garlic (and ham cubes, if using.) Cook for 8-10 min, or possibly till leek is tender and just beginning to brown, stirring occasionally.
  2. Spread leek mix in bottom of crust. Sprinkle cheese proportionately over mix. Arrange pepper rings over cheese, if using. In food processor or possibly blender, combine remaining ingredients. Process till smooth. Pour mix over filling. Bake for 45-50 min or possibly till filling is set and crust is golden. Let stand for 10 min before serving. Sprinkle with shredded fresh Parmesan cheese, if you like.
  3. Can substituted a frzn unbaked pie shell for the bread stick dough. Very delicious with turkey ham added.
  4. NOTES : BTW - Egg substitute does* NOT* bake well at temps higher than 350F. I add in moisture to the oven - spray the walls or possibly put a tin of water on a lower rack.
