Ingredients
- 2 envelopes unflavored gelatin
- 1 cup sugar
- 1/2 tsp. salt
- 8 egg yolks
- 2 tsp grated lime peel (set aside)
- 1 cup lime juice
- 1/2 cup water
- 8 egg whites
- 1 cup sugar
- 1 cup sour cream
- 2 graham cracker pie crusts
Directions
- In saucepan combine unflavored gelatin, 1 cup sugar and salt.
- Beat egg yolks, lime juice, and water till blended.
- Stir into gelatin.
- Cook over medium heat stirring constantly just until mixture comes to a boil. Remove from heat. Add grated lime peel. Chill stirring occassionally till mixture mounds when spooned.
- In bowl beat egg whites till soft peaks form. Gradually add 1 cup sugar, beat till stiff.
- Fold gelatin mixture into beaten egg whites.
- Add sour cream. Divide up between two graham cracker pie crusts and chill until set.
