Ingredients
- 1 1/2 cups white whole wheat flour (I use King Arthur brand)
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 tablespoons butter
- 4 tablespoons coconut oil
- 3/4 cup herb-infused sugar (add a bit more if you like your cookies on the sweet side)
- 2 eggs
- Turbinado or other coarse sugar for sprinkling

%20and%20I%20was%20making%20these%20herb-infused%20sugar%20cookies%20anyway,%20I%20decided%20to%20tip%20my%20hat%20to%20The%20Day%20After%20The%20Ninj's%20Birthday.%3C/p%3E%3Cp%3EThese%20herbed%20sugar%20cookies%20are%20really%20a%20joint%20effort,%20though,%20because%20they%20center%20on%20herb-infused%20sugar%20(in%20this%20case,%20lavender,%20vanilla%20and%20lime%20zest)%20made%20by%20my%20new%20blogger%20friend%20Jess%20of%20Gather%20Round%20Kitchen.%20We%20met%20at%20a%20local%20food%20swap,%20where%20she%20was%20swapping%20this%20simple%20infused%20sugar.%20Easy%20yet%20fancy:%20totally%20brilliant!%3C/p%3E%3Cp%3EI%20used%20it%20to%20make%20sugar%20cookies%20but%20you%20could%20also%20use%20it%20in%20your%20tea%20or%20some%20simple%20breakfast%20muffins.%20Another%20swapper%20used%20it%20to%20make%20a%20lovely%20sugar%20scrub%20as%20well.%3C/p%3E%3Cp%3EI%20love%20this%20sugar%20cookie%20recipe%20because%20it's%20not%20only%20simple%20but%20also%20leans%20a%20tad%20to%20the%20healthy%20side%20and%20can%20be%20customized%20easily.%20If%20you%20don't%20have%20or%20want%20to%20use%20herb-infused%20sugar,%20simply%20add%20a%20little%20vanilla%20and%20cinnamon.%20Don't%20like%20cinnamon?%20Throw%20in%20some%20citrus%20zest%20instead.%20The%20recipe%20is%20great%20for%20holiday-themed%20cookie%20cutters%20but%20you%20can%20also%20just%20use%20a%20basic%20circle%20cutter%20to%20make%20it%20an%20everyday%20cookie.%3C/p%3E%3Cp%3ESometimes%20a%20simple%20recipe%20is%20all%20you%20need%20to%20get%20your%20creative%20juices%20flowing.%3C/p%3E%3Cp%3EDo%20you%20make%20or%20use%20flavored%20sugars?%20Leave%20a%20comment:%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3EHerb-Infused%20Sugar%20Cookies%3C/p%3E%3Cp%3EIf%20you%20choose%20to%20make%20this%20recipe%20with%20regular%20sugar,%20simply%20add%20a%20teaspoon%20of%20vanilla%20and%20a%20teaspoon%20of%20cinnamon%20to%20the%20ingredients%20listed%20below.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20whisk%20together%20the%20flours,%20baking%20powder%20and%20salt.%20In%20the%20bowl%20of%20a%20stand%20mixer,%20cream%20together%20the%20butter,%20coconut%20oil%20and%20sugar%20until%20smooth%20and%20light.%20Add%20the%20eggs%20and%20mix%20until%20combined.%20Add%20the%20flour%20mixture%20and%20mix%20until%20a%20nice%20dough%20forms.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20LIGHTLY%20floured%20surface%20(or%20a%20large%20sheet%20of%20parchment%20paper).%20Divide%20into%20three%20portions%20(just%20for%20manageability).%20Roll%20one%20section%20out%20to%20a%20thickness%20of%20about%201/4%20inch.%20Cut%20out%20shapes%20using%20a%20cookie%20cutter%20and%20place%20on%20a%20parchment-lined%20baking%20sheet.%20Sprinkle%20each%20cookie%20with%20coarse%20sugar.%20Repeat%20for%20all%20remaining%20sections.%3C/p%3E%3Cp%3EBake%20for%20about%208-10%20minutes%20--%20they%20don't%20really%20brown%20so%20be%20sure%20not%20to%20overcook%20them.%20Cool%20completely%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
