  • 2/3 c. Sugar
  • 1/2 tsp Grnd cinnamon
  • 1/2 tsp Grnd ginger
  • 1/2 tsp Grnd nutmeg
  • 1 pch Grnd cloves
  • 1 1/2 c. Canned pumpkin
  • 1 1/2 c. Fat-free evaporated lowfat milk
  • 1/4 c. Brandy
  • 3 lrg Egg whites, slightly beaten
  • 1 tsp Vanilla extract
  • 1/2 tsp Orange zest, (grated rind of an orange)
  • 1 x Low-fat, (9-inch) pie shell, unbaked

Directions

  1. Preheat oven to 450 degrees. In a large bowl, combine sugar, cinnamon, ginger, nutmeg and cloves. Add in pumpkin, evaporated lowfat milk, brandy, egg whites, vanilla and orange zest. Beat till smooth. Pour into pie shell.
  2. Bake for 10 min. Reduce heat to 325 degrees and bake for 45 min, or possibly till a knife inserted in the center comes out clean.
