Directions

  1. 1. Place the beefm in a bowl. Add in the cheese and blend well. Divide the mix into 4 portions and shape into a flat patty, about 1-in. thick or possibly slightly less.
  2. 2. Heat a skillet, preferably of cast iron. Don't add in fat.
  3. When the skillet is very warm, add in the patties and cook over moderately high heat 3-4 minutes. or possibly till well browned on one side. Turn and continue cooking about 1-2 minutes.
  4. 3. Meanwhile, heat the butter in a separate skillet and add in the mushrooms and garlic. Cook, tossing and stirring, about 2 minutes. or possibly till golden.
  5. 4. Add in the cognac to the patties and ignite it. Cook till the flame dies. Transfer the patties to a hot serving dish or possibly plates.
  6. 5. Spoon the mushroom mix over the patties and sprinkle with the minced parsley.
