Ingredients

  • 1 1/4 cups finely diced Persian or English cucumbers (about 2 small Persian cucumbers)
  • 1 medium vine-ripened tomato, seeds removed, finely diced (or 1 cup sliced grape tomatoes)
  • 2 scallions, green and white parts, thinly sliced
  • 2 teaspoons + 2 teaspoons extra-virgin olive oil
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon sea salt
  • 2 tablespoons chopped fresh parsley, cilantro, or mint (or mixture)
  • 6 large slices whole grain bread
  • 2 cups hummus of choice
