I am in-love. Deeply in-love. I am so smitten with an 800 pound senior horse, that I have little time to spend on my food blog, let alone anything else! When I sent my horse to a distant ranch (125 miles away), to enjoy her golden years in retirement, I had no idea how much I'd pine for her. Memories of watching "Savvy" pinning her ears, while being judged, in cutting (cattle) competitions and proving how she could work a cow by running circles around it and her athletic moves, still makes me smile with fond memories. I was too competitive nervous for me to do the cattle classes-- instead, I had a trainer who loved that horse almost as much as me.

,%20to%20enjoy%20her%20golden%20years%20in%20retirement,%20I%20had%20no%20idea%20how%20much%20I'd%20pine%20for%20her.%20%20Memories%20of%20watching%20%22Savvy%22%20pinning%20her%20ears,%20while%20being%20judged,%20in%20cutting%20(cattle)%20competitions%20and%20proving%20how%20she%20could%20work%20a%20cow%20by%20running%20circles%20around%20it%20and%20her%20athletic%20moves,%20still%20makes%20me%20smile%20with%20fond%20memories.%20I%20was%20too%20competitive%20nervous%20for%20me%20to%20do%20the%20cattle%20classes--%20instead,%20I%20had%20a%20trainer%20who%20loved%20that%20horse%20almost%20as%20much%20as%20me.%3C/p%3E%3Cp%3EThat%20was%20before%20my%20son%20was%20born--%20who%20turns%2022%20in%20November.%20Savannah%20Sue%20turns%2027%20years%20old%20this%20August,%20and%20she%20is%20still%20looking%20great.%20%20Once%20I%20retired%20her%20from%20the%20show%20ring,%20she%20became%20my%20faithful%20trail%20horse.%20Nowadays,%20the%20%20two%20of%20us%20have%20arthritis,%20so%20we%20both%20walk%20with%20a%20bit%20of%20a%20limp.%20I%20don't%20have%20the%20strength%20to%20climb%20up%20in%20her%20saddle%20anymore%20(unless%20I%20have%20a%20mounting%20block)%20and%20she's%20also%20a%20bit%20stiff%20in%20her%20joints.%20It's%20time%20for%20her%20to%20just%20be%20a%20horse,%20though%20I%20still%20find%20her%20to%20be%20that%20beautiful%20Arabian%20that%20I%20bought%20when%20she%20was%20just%20a%20yearling.%20How%20time%20flies!%20%20Now%20that%20she's%20home%20again,%20%20I%20find%20that%20I%20am%20anxious%20to%20get%20home%20from%20work,%20and%20in%20in%20a%20hurry%20to%20whip%20up%20a%20quick%20dinner.%20I'm%20looking%20for%20shortcuts%20to%20have%20enough%20daylight%20so%20that%20I%20can%20head%20down%20to%20the%20ranch%20to%20brush%20my%20girl,%20feed%20her%20carrots%20and%20enjoy%20the%20beautiful%20view%20where%20she%20resides%20in%20an%20enormous%20paddock.%20Just%20this%20week,%20I%20had%20thawed%20a%20flank%20steak%20and%20I%20happened%20to%20catch%20an%20episode%20of%20America's%20Test%20Kitchen,%20a%20couple%20of%20days%20earlier.%20%20Thankfully,%20I%20had%20all%20of%20the%20ingredients%20and%20I%20was%20so%20pleased%20that%20it%20took%20all%20of%205%20minutes%20to%20prep%20the%20meat:%3C/p%3E%3Cp%3EYou%20need%20olive%20oil,%20fresh%20rosemary%20(not%20dried,%20please),%20garlic%20and%20a%20shallot.%20%20I%20used%20a%20mini%20chopper%20but%20a%20blender%20is%20fine,%20too.%20%20%20I%20actually%20did%20a%20rough%20chop%20on%20the%20veggies%20and%20put%20the%20whole%20garlic%20clove%20in--%20I%20figured%20the%20mini%20food%20processor%20would%20break%20it%20down%20just%20fine--%20which%20it%20did!%3C/p%3E%3Cp%3EPlace%20steak%20on%20rimmed%20baking%20sheet%20or%20in%20large%20baking%20dish.%20Using%20dinner%20fork,%20prick%20steak%20about%2020%20times%20on%20each%20side.%20Rub%20both%20sides%20of%20steak%20evenly%20with%20salt%20and%20then%20with%20paste.%20Cover%20with%20plastic%20wrap%20and%20refrigerate%20at%20least%201%20hour%20or%20up%20to%2024%20hours.%20%20This%20is%20when%20I%20raced%20down%20to%20the%20ranch%20to%20check%20on%20my%20horse...%3C/p%3E%3Cp%3EThere%20was%20not%20a%20soul%20around--%20just%20a%20few%20horses,%20some%20goats%20and%20the%20evening%20Salinas%20Valley%20(CA)%20wind....%3C/p%3E%3Cp%3ESo%20much%20for%20brushing%20Savvy's%20mane....%3C/p%3E%3Cp%3EI%20returned%20home%20about%207:15pm%20and%20it%20was%20too%20late%20to%20start%20the%20charcoals%20on%20our%20Weber%20grill.%20%20Fortunately,%20we%20have%20a%20gas%20grill,%20so%20I%20took%20a%20chance%20and%20gave%20my%20husband%20instructions%20on%20what%20to%20do--%20first,%20get%20the%20grill%20nice%20a%20hot:%3C/p%3E%3Cp%3EUsing%20paper%20towels,%20wipe%20paste%20off%20steak;%20season%20both%20sides%20with%20pepper.%20Grill%20steak%20directly%20over%20coals%20(or%20a%20gas%20grill)%20until%20well%20browned,%204%20to%206%20minutes.%20Using%20tongs,%20flip%20steak;%20grill%20until%20second%20side%20is%20well%20browned,%203%20to%204%20minutes.%20Using%20paring%20knife,%20make%20small%20cut%20into%20thickest%20part%20of%20meat;%20if%20meat%20is%20slightly%20less%20done%20than%20desired,%20transfer%20steak%20to%20cutting%20board%20(meat%20will%20continue%20to%20cook%20as%20it%20rests).%20If%20steak%20is%20significantly%20underdone,%20position%20so%20that%20thinner%20side%20is%20over%20cool%20side%20of%20grill%20and%20thicker%20side%20is%20over%20hot%20side;%20continue%20to%20cook%20until%20thickest%20part%20is%20slightly%20less%20done%20than%20desired,%20then%20transfer%20steak%20to%20cutting%20board.%3C/p%3E%3Cp%3ENOTE:%20The%20meat%20was%20ready%20in%209%20minutes.%20I%20thought%20it%20seemed%20strange%20to%20cut%20a%20hole%20in%20the%20middle%20of%20the%20steak,%20but%20now%20I%20understand...%20you%20want%20a%20shallow%20hole--%20not%20enough%20to%20allow%20the%20juices%20to%20escape%20(thus%20dry%20steak).%20%20One%20more%20minute%20and%20the%20steak%20would%20have%20been%20overdone.%3C/p%3E%3Cp%3ELoosely%20tent%20steak%20with%20foil;%20let%20rest%205%20to%2010%20minutes.%20Using%20sharp%20chef's%20knife%20or%20carving%20knife,%20slice%20steak%20about%20%C2%BC%20inch%20thick%20against%20grain%20and%20on%20bias.%20Serve%20immediately.%3C/p%3E%3Cp%3EI%20took%20this%20one,%20very%20%20fast%20shot,%20%20and%20we%20enjoyed%20this%20with%20grilled%20vegetables%20and%20a%20baked%20potato.%20%20The%20meat%20was%20simple%20to%20make%20and%20flavorful.%20Had%20I%20marinated%20this%20overnight,%20I%20think%20it%20would%20have%20been%20even%20better.%20I%20do%20apologize%20that%20my%20photos%20aren't%20my%20best,%20but%20like%20I%20said...%20I'm%20so%20smitten%20with%20my%20horse,%20that%20I%20am%20taking%20a%20modified%20break%20from%20blogging%20recipes--%20please%20forgive%20me,%20if%20I%20haven't%20been%20on%20your%20blog%20lately.%20%20I%20will,%20but%20I%20need%20to%20enjoy%20the%20novelty%20of%20having%20a%20big%20pet%20that%20follows%20me%20around%20like%20a%20puppy%20dog.%20%20My%20horse%20has%20given%20me%2026%20years%20of%20loyalty,%20beautiful%20trail%20rides,%20trophies,%20ribbons%20and%20joy.%20%20She%20deserves%20a%20big%20welcome%20home,%20lots%20of%20carrots%20and%20the%20best%20quality%20of%20life.%20%20People%20ask%20me%20how%20long%20horses%20live--%20my%20answer%20is%20that%20I%20have%20known%20horses%20who%20lived%20to%20be%20in%20their%20thirties!%20%20I'll%20be%20posting%20more%20photos%20of%20the%20ranch,%20because%20it%20is%20a%20very%20beautiful%20place%20to%20be.%20%20In%20fact,%20I'm%20on%20my%20way%20as%20soon%20as%20I%20hit%20SEND.%3C/p%3E%3Cp%3EADDENDUM:%3C/p%3E%3Cp%3EI%20lost%20my%20beloved%20mare%20on%20June%2019,%202010.%20%20For%20reasons%20we%20will%20never%3C/p%3E%3Cp%3Eknow,%20she%20colicked.%20The%20vet%20could%20not%20save%20her,%20and%20she%20was%20in%20great%3C/p%3E%3Cp%3Epain.%20%20I'm%20thankful%20to%20have%20brought%20her%20home,%20closer%20to%20me.%20I%20will%20never%3C/p%3E%3Cp%3Eforget%20my%20sweet%20family%20member.%20%20Thank%20you,%20Savannah.%3C/p%3E){kind=link}
