Directions

  1. Preheat oven to 425.
  2. Hot the oil in a large skillet over medium heat. Add in the onions and saute/fry till light golden - approximately. 7 min. Add in the parsley, garlic and sugar and stir to mix. Add in the tomatoes and cook till they are softened and their liquid is absorbed, about 20 min. Add in the wine to the skillet and cook till the liquid is absorbed. Add in the shrimp and cook, stirring constantly for 30 seconds. Remove from heat.
  3. Pour the shrimp and sauce into a 2 qt casserole. Top with Feta cheese.
  4. Bake till the cheese melts, about 5 min.
