Directions

  1. Cook the berries with 4 Tbsp. of the sugar, but without water, till soft. Pass them through the fine disk of a food mill, then all this puree to cold.
  2. Beat the crem cheese with the remaining Tbsp. of sugar till smooth.
  3. Beat the cheese together with the gooseberry puree till completely amalgamated, then beat in the heavy cream.
