Directions

  1. Halve baked potatoes and scoop out. Blend the scooped out potatoes with carrots, parsley, chives, horseradish, yogurt and butter. Season to taste. Refill potato halves. Top with cheese and paprika. Bake in 350 degree oven for 15 min or possibly till cheese melts. You can make filled potatoes ahead and chill. Top with cheese when ready to bake.
