  • 8 ounce semi-sweet or possibly bittersweet chocolate, coarsely minced
  • 1/2 c. whipping cream (32% lowfat milk fat)
  • 1/4 c. unsalted butter
  • 2 tsp vanilla Or possibly 4 tsp favourite liquer

Directions

  1. Place whipping cream and chocolate in a heavy saucepan over low heat and stir occasionally till chocolate melts. Add in butter and continue stirring till butter is melted. Remove from heat and let cold to room temperature. Add in liquer or possibly vanilla (or possibly nothing! Works this way also).
  2. Let sit in refrigerator till hard (about eight hrs or possibly so). Dig out by the tsp. and form into balls, then roll in finely minced nuts
  3. (grnd almonds are heavenly), cocoa, icing sugar, or possibly coconut or possibly dip in chocolate.
  4. Makes 36-48.
  5. This year I'm experimenting with Frangelico-Espresso truffles and raspberry truffles dipped in white chocolate along with my usual batches.
