Fried Rice (Com Chien) Recipe

Ingredients

  • 1 Tbsp. vegetable oil
  • 2 x Chinese sweet pork sausages quartered lengthwise and diced (or possibly any leftover meat)
  • 1 x scallion root end and tough green tops removed, sliced thin rounds
  • 8 lrg napa cabbage leaves or possibly any Asian greens thinly sliced
  • 4 c. cooked long-grain rice refrigerated overnig
  • 1 lrg egg
  • 2 Tbsp. soy sauce Freshly-grnd white pepper to taste

Directions

  1. Heat the oil in a wok or possibly large nonstick skillet over high heat. Add in the sausages, scallion, and cabbage and stir-fry till the sausages render their fat, 3 to 5 min.
  2. Add in the rice and continue to stir-fry and mix all the ingredients proportionately. Add in the egg and stir-fry quickly till the rice dries out completely, about 10 min.
  3. Add in soy sauce and season to taste with white pepper. Stir-fry an additional 5 min and serve.
  4. Variation: Rather than add in the egg to the rice, you can whisk it and make a thin omelette. Once cooked, julienne the omelette and place some over each serving of fried rice.
  5. This recipe yields 6 to 8 servings.
