%20but%20hadn%E2%80%99t%20made%20them%20at%20home.%3C/p%3E%3Cp%3ELast%20week%20when%20I%20was%20working%20on%20the%20City%20Fruit%20dinner,%20I%20was%20also%20reading%20Yotam%20Ottolenghi%20and%20Sami%20Tamimi%E2%80%99s%20new%20Jersualem%20cookbook.%20It%20isn%E2%80%99t%20at%20all%20vegetarian,%20unlike%20Ottolenghi%E2%80%99s%20previous%20offering%20(Plenty),%20but%20is%20absolutely%20stunning%20and%20makes%20me%20wish%20to%20make%20another%20trip%20to%20Israel%20as%20soon%20as%20possible.%20In%20one%20of%20his%20recipes,%20he%20mentions%20simmering%20an%20unpeeled%20orange%20and%20then%20blitzing%20it%20in%20the%20blender%20and%20incorporating%20it%20into%20a%20sauce%20(for%20salmon,%20if%20I%20remember%20right).%3C/p%3E%3Cp%3EI%20decided%20to%20try%20using%20the%20boiled%20orange%20as%20the%20basis%20of%20an%20olive%20oil%20emulsion.%20I%20thought%20it%20might%20actually%20reach%20to%20a%20vegan%20mayo%20type%20consistency,%20and%20I%E2%80%99m%20sure%20it%20would%20if%20you%20added%20lecithin,%20but%20as-is%20it%20makes%20a%20delicious%20dressing%20that%20I%20plan%20to%20use%20in%20many%20future%20dishes.%20The%20instructions%20below%20make%20more%20than%20you%20will%20need%20for%20the%20artichokes,%20but%20it%20is%20about%20the%20smallest%20amount%20that%20is%20practical%20and%20I%20don%E2%80%99t%20think%20you%20will%20have%20any%20problems%20coming%20up%20with%20uses%20for%20the%20extra.%3C/p%3E%3Cp%3EFor%20frying%20the%20artichokes,%20you%20can%20go%20one%20of%20two%20ways.%20Actual%20deep-frying%20is%20preferable%20%E2%80%93%20they%20will%20cook%20more%20quickly%20and%20evenly.%20But%20shallow%20frying%20is%20a%20functional%20choice%20too%20that%20wastes%20less%20oil.%20I%E2%80%99ve%20had%20you%20quarter%20the%20artichokes%20so%20that%20they%20are%20in%20small%20enough%20pieces%20for%20the%20shallow%20fry%20to%20work.%3C/p%3E%3Cp%3EDon%E2%80%99t%20even%20think%20about%20doing%20this%20with%20canned%20artichoke%20hearts,%20it%20will%20be%20terrible.%20%20There%20are%20instructions%20for%20how%20to%20trim%20the%20artichokes%20below,%20in%20case%20you%20haven%E2%80%99t%20done%20it%20before.%20For%20this%20dish%20in%20particular,%20we%20want%20everything%20that%20you%20are%20serving%20to%20the%20guest%20to%20be%20fully%20edible,%20so%20be%20quite%20aggressive%20in%20removing%20the%20outer%20leaves%20and%20top%20of%20the%20artichoke.%20Here%20is%20how%20it%20should%20look%20before%20frying:%3C/p%3E%3Cp%3EFried%20Artichokes%20with%20Orange-Olive%20Oil%20Emulsion%3C/p%3E%3Cp%3EVegetarian,%20vegan,%20gluten%20free%20and%20kosher%3C/p%3E%3Cp%3EServes%204%20as%20an%20appetizer%3C/p%3E%3Cp%3EPut%20orange%20slices%20in%20a%20small%20saucepan%20with%20enough%20water%20to%20cover.%20Bring%20to%20a%20simmer%20and%20cook%20until%20there%20are%20just%20a%20few%20tablespoons%20of%20liquid%20left%20in%20the%20pan,%20about%2045%20minutes.%3C/p%3E%3Cp%3EPut%20orange%20and%20orange%20liquid%20in%20blender%20along%20with%20sherry%20vinegar,%20mustard,%20and%20kosher%20salt.%20Put%20lid%20on%20and%20start%20blender%20on%20medium%20speed.%20With%20the%20blender%20running,%20remove%20the%20center%20cap%20from%20the%20lid%20and%20slowly%20drizzle%20in%20the%20olive%20oil.%20Just%20before%20serving,%20blend%20again%20to%20re-emulsify.%3C/p%3E%3Cp%3EFor%20the%20Fried%20Artichokes%3C/p%3E%3Cp%3ETo%20prepare%20the%20artichokes:%20As%20you%20are%20working,%20rub%20each%20cut%20surface%20with%20the%20open%20surface%20of%20the%20lemon%20to%20prevent%20browning.%20Remove%20the%20coarse%20outer%20leaves,%20cut%20off%20the%20top%20third%20to%20half%20of%20the%20leaves,%20trim%20the%20stem,%20peel%20the%20base%20and%20stem,%20cut%20vertically%20into%20quarters,%20and%20remove%20the%20choke%20and%20any%20pointy%20leaves.%3C/p%3E%3Cp%3ELine%20a%20plate%20with%20paper%20towels.%20If%20shallow%20frying,%20put%20about%201/8%E2%80%B3%20oil%20in%20a%20skillet%20over%20medium-high%20flame.%20If%20deep%20frying,%20set%20up%20a%20deep%20fryer%20or%20medium%20saucepan%20with%20enough%20oil%20to%20fully%20cover%20the%20quartered%20artichokes%20and%20heat%20to%20355%20F.%20Fry%20the%20artichokes,%20turning%20occasionaly,%20until%20really%20well%20browned.%20Remove%20with%20tongs%20to%20the%20paper%20towels,%20season%20with%20Maldon%20salt,%20and%20allow%20to%20drain%20for%20a%20few%20seconds.%3C/p%3E%3Cp%3EServe%20very%20hot,%20either%20plated%20with%20the%20Orange-Olive%20Oil%20Emulsion%20or%20passing%20that%20on%20the%20side.%3C/p%3E%3Cp%3Enever%20miss%20a%20recipe%3C/p%3E%3Cp%3EJoin%20over%20104,000%20monthly%20readers!%3C/p%3E){kind=link}
