Ingredients
- 2 c. finely minced peeled cored Bosc pears (about 3 large
- 1/4 c. finely minced fresh mint
- 2 Tbsp. finely minced red bell pepper
- 1 Tbsp. finely minced jalapeno chile
- 2 tsp chopped peeled fresh ginger
- 1 clv garlic chopped
- 1/4 c. cider vinegar
- 2 Tbsp. honey
Directions
- Combine first 6 ingredients in medium bowl. Whisk vinegar and honey in small bowl to blend. Stir into pear mix. Cover and chill at least 30 min. (Can be prepared 4 hrs ahead. Cover and chill.)
- NOTES:Makes about 2 c.
