Directions

  1. Remove sausage from casings. Crumble and saute in a large frying pan over moderate heat. Cook till well done. Drain and throw away fat. Return to frying pan along with butter and oil. Add in onions and saute. Stir in wine, thyme and cloves. Cover and simmer over low heat for 30 min. Throw away cloves. Fold in cream, cheese, nutmeg and seasonings. Cook over moderate heat till cream thickens, 3 to 5 min. To serve, place hot pasta cooked al dente (liquid removed) and add in remaining butter in a 2 1/2 qt bowl. Toss well and spoon onto warmed plates. Top with sausage mix. Sprinkle with Parmesan and cayenne. Serves 6.
