Easy Summer Squash Recipe

Ingredients

  • 8-10 fresh 6-8 inch yellow squash
  • 2 med./lg. yellow onions
  • 3/4 stick "butter"
  • 1 teaspoon salt

Directions

  1. Clean and slice in 1/4 inch slices all yellow squash. Place sliced squash in large pot and boil in 2 qts of water. Add in 1 tsp. salt to boiling water and squash.
  2. Peel and dice onions. Saute/fry onions in 1/2 stick of butter while squash is boiling.
  3. Boil squash approximately 30 min or possibly till tender. Drain water form squash and place squash in skillet with sauteed onions. Add in remaining 1/4 stick of butter.
  4. Simmer 30-35 min turning frequently. Serve piping warm. Season to taste with salt and pepper.
