Curried Chicken Fingers On A Stick Recipe

Ingredients

  • 1 lb chicken breasts, boneless, skinless, cut into strips
  • 1 doz Bamboo skewers (soaked in water for two hrs before using) Half of a small onion, chopped
  • 2 x cloves of garlic, chopped
  • 1 Tbsp. grated fresh gingerroot
  • 1 Tbsp. red curry paste
  • 1 can of coconut lowfat milk
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. soy sauce
  • 2 Tbsp. sugar Healthy pinch of cayenne Healthy pinch of salt Thread the chicken strips onto your skewers and cut off the pointed ends of the skewer.

Directions

  1. Combine the remaining ingredients in a very large ziplock bag and shake to blend thoroughly. Now add in the skewers with no sharp points left on them, into the bag and chill for 3-4 hrs.
  2. Grill till just done and serve with a spicy peanut sauce on the side.
  3. Garnish with minced cilantro.
