Great for leftover turkey, or use rotisserie chicken for convenience. To stretch the dish to serve more people, add some cooked rice or pasta and use a full cup of mayonnaise.
Ingredients
- 2 cups chopped chicken or turkey meat
- 1 can Cream of Chicken soup
- 1/2 C diced celery
- 2 hardboiled eggs, chopped
- 2-3 T toasted almond slivers
- 3/4 C mayo
- 1/2 C shredded cheese
- 2 chopped scallions
- 1 C crushed potato chips, divided
Directions
- Heat oven to 350 degrees.
- Mix ingredients together, holding back half of the potato chips.
- Bake 30 minutes, the top with rest of chips and bake another 15-20 minutes.
