  • 4 cups thinly sliced baby bok choy (about three bulbs)
  • 1 carrot, julienned
  • 1 scallion, thinly sliced
  • FOR THE DRESSING
  • ¼ cup Rice Wine Vinegar
  • 1 Tablespoon Sesame Oil
  • 2 teaspoon sugar
  • ¼ teaspoon salt
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, to be removed before you pour the dressing on the slaw (optional)
