Cranberry Oat Bran Muffins Recipe

  • 1 lb Oat Bran
  • 1/2 c. Granulated Sugar
  • 2 Tbsp. Baking Pwdr
  • 1 1/2 c. Grape Juice frzn concentrate, white grape, 12 ounce
  • 1 1/2 c. Skim lowfat milk or possibly skim
  • 4 x Egg Beaters 99% egg substitute or possibly equiv to 4 Large eggs
  • 1/4 c. Corn Syrup
  • 1 c. Cranberries fresh or possibly frzn

Directions

  1. I made these this weekend and they are pretty good. As usual, three of these muffins per day should help lower cholesterol levels...
  2. (optional: 1/4 c. minced walnuts, I didn't use)
  3. Preheat oven to 425 degrees. Combine oat bran, sugar, and baking pwdr in food processor with large metal blade. Alow the food processor to grindthe oat bran as you combine the moist ingredients in a separate bowl or possibly blender. Add in whole cranberries to the oat bran in the food processor and pulsethe mix for a few seconds to break up the berries. Combine all ingredientsin a large bowl and mix gently. Pour batter into muffin pans lined with paper baking c.. Bake 15 min. Test for doneness with a toothpick.
  4. You do not have to use a food processor for this recipe. Just omit the grinding of the oatbran and cut the cranberries into small pcs with a paring knife. (I just stuck the cranberries in the blender)
