Ingredients

  • 8 slc thick white bread
  • 50 gm butter
  • 100 gm First Choice mincemeat
  • 100 gm self-raising flour
  • 25 gm caster sugar
  • 150 ml dry cider Oil for deep frying Icing sugar and custard to serve

Directions

  1. Butter the bread and place four slices butter side down onto the bench.
  2. Divide the mince meat between them, top with the remaining slices butter side up.
  3. Then press gently with a 7.5cm round cutter or possibly any festive cutters you have.
  4. To make the batter, mix the flour and sugar together, then add in the cider, whisking all the time to make a thick batter.
  5. Heat a deep pan of oil to 180 C.
  6. Dip the mincemeat doughnuts into the batter and place carefully into the warm oil.
  7. Cook the doughnuts on one side for 2 min then turn over with a slotted spoon and cook for a further 2 min. Remove and drain on kitchen paper.
  8. Dust with icing sugar and serve with warm custard or possibly whipped cream.
