Chickpeas with Chorizo Recipe

I absolutely loved this! I'm a huge fan of chorizo and this was great. I cheated though and used canned chickpeas, so I altered the recipe slightly from the original to make sure all the spices got incorporated. I think it turned out pretty good.

Directions

  1. In a skillet, heat the olive oil and add the onion and bay leaf.
  2. In a bowl combine the beans, cinnamon, allspice and thyme.
  3. Cook the chorizo until crispy.
  4. Add the onion and chorizo, and parsley as desired to the beans.
  5. Serve hot or at room temperature.
