  • 2 x Cucumbers, peeled and cut into 1/4-inch slices
  • 4 whl chicken breasts, boned and cut into strips
  • 2 Tbsp. Paprika, divided
  • 2 ounce Butter
  • 2 ounce Oil
  • 1 sm Onion, finely diced
  • 4 ounce White wine
  • 1 pt Whipping cream Salt Pepper Lemon juice Worcestershire sauce

Directions

  1. Blanch cucumbers in 2 qts of boiling, salted water. Remove and refresh cucumbers in cool water. Season chicken strips with salt and 1 tsp. paprika. Heat butter in skillet. Add in oil. Allow to start browning and add in diced onion. Stir. Add in chicken and brown on all sides. Remove chicken from skillet and keep hot. Add in paprika and cook for 2 min over moderate heat. Add in white wine and reduce by half. Add in whipping cream and reduce till thick. Season with salt, pepper, lemon juice and Worcestershire sauce to taste. Add in chicken and cucumbers. Serve immediately.
