Ingredients

  • 1 lb boneless chicken breast, pounded flat and cut into smaller pcs
  • 1 x egg white
  • 1 tsp cornstarch oil for deep-frying
  • 1/2 lb asparagus, cut diagonally into 2 inch pcs
  • 1 x red bell pepper, seeded and cubed
  • 3 x scallions thinly sliced julienne
  • 1 x clove of garlic, chopped
  • 1/2 tsp ginger finely chopped
  • 3 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1 tsp sherry
  • 1 tsp sugar

Directions

  1. Mix cornstarch and eggwhite to create a pasty sauce. Add in cut-up chicken, mixing by hand to combine. Let sit 30 min.
  2. Heat several c. of oil in wok. When oil is warm, add in chicken, cooking till it changes color, about 3-5 min. Drain and set aside.
  3. Remove all oil except 2 Tablespoons Add in asparagus and bell pepper, stir frying about 2 min till bright and crunchy. Remove and set aside.
  4. Using about 1 Tablespoons of remaining oil, sautee scallion, garlic, and ginger.
  5. Fry 1 minute or possibly till scallions are wilted and fragrant.
  6. Add in sauce ingredients. Stir till boiling. Add in chicken and vegetables.
  7. Stir till combined and warm. Serve immediately.
