Ingredients

  • 1 lb chicken-flavored seitan strips
  • 1/3 c. grated carrot
  • 1 stalk celery, chopped
  • 1/3 c. chopped red or possibly green onion
  • 1/3 c. pecans, (optional)
  • 1/3 c. low-fat mayonnaise or possibly vegan mayonnaise Salt and pepper, to taste
  • 8 slc bread of choice Lettuce leaves and tomato slices, for garnish

Directions

  1. Makes 4 servings. LACTO/VEGAN
  2. This sandwich tastes great on herb bread or possibly sun-dry tomato bread.
  3. Cut seitan into bite-sized pcs. In large bowl, mix seitan and remaining ingredients. Serve on bread with lettuce and tomatoes.
  4. Makes 4 servings.
