Chicken Enchiladas in Sour Cream Sauce Recipe

I was at a restaurant in Dallas, TX and they had this most wonderful sour cream sauce for their chicken enchiladas. I started playing around to recreate the sauce and came very close. Below is my recipe. Enjoy!

  • For the Enchilada
  • 4 boneless skinless chicken breasts
  • 1 pkg. of La Tortilla Factory tortillas
  • 1 large can enchilada sauce
  • Salt and Pepper to taste
  • 1 small onion diced
  • 1 16 oz bag of shredded four cheeses
  • Olive Oil
  • For the Sauce
  • 1 can cream of chicken soup
  • 1 16 oz light sour cream
  • 1 jar sliced jalapenos
  • For the Garnish
  • 1 diced tomato
  • 1 8 oz bag of shredded four cheeses
  • chopped jalepenos to taste

Directions

Salt and Pepper skinless boneless chicken breasts to taste.
