I was at a restaurant in Dallas, TX and they had this most wonderful sour cream sauce for their chicken enchiladas. I started playing around to recreate the sauce and came very close. Below is my recipe. Enjoy!

Ingredients
- For the Enchilada
- 4 boneless skinless chicken breasts
- 1 pkg. of La Tortilla Factory tortillas
- 1 large can enchilada sauce
- Salt and Pepper to taste
- 1 small onion diced
- 1 16 oz bag of shredded four cheeses
- Olive Oil
- For the Sauce
- 1 can cream of chicken soup
- 1 16 oz light sour cream
- 1 jar sliced jalapenos
- For the Garnish
- 1 diced tomato
- 1 8 oz bag of shredded four cheeses
- chopped jalepenos to taste
